Yann Le Bouler makes us discover three of his vintages with spatial consonances: Apollo 93 White, Ellipse White and Ellipse Red.
Born in the heart of the Hérault vineyards, the YLB estate is located at the gates of Béziers in the Languedoc. It extends over 6.5 ha on Villafranchian terraces made up of red earth and rolled pebbles. This terroir, on the hillside and the Mediterranean climate favors the development of great organic wines.
Yann Le Bouler worked as a sports educator for 20 years in the Paris region.
At the age of 40, he decided to make his dream come true: to become a wine producer in Boujan-sur-Libron, a village where he spent part of his childhood.
Self-taught, he learns, with each vintage, to structure, organize, transform, cultivate and vinify in order to produce beautiful cuvées!
Quickly, his wines are found on beautiful Parisian restaurant tables.
His choice to work with restaurants as a priority is not trivial: as an epicurean, loving sharing, conviviality, meals with friends, the link is made around this ancestral beverage.

Ellipse White 2019 – 90% Carignan Blanc and 10% Roussane – Magnificent expression of a forgotten grape variety: Carignan Blanc. A brilliant color cuvée that releases a bouquet of white flowers and yellow fruits. A very subtle, mineral and lively wine, of great freshness. Nice pairing with fish and seafood.
Apollo 93 – 100% Viognier – Rich and balanced, this wine with a floral and fruity bouquet releases aromas of white flowers, exotic fruits on honeyed and toasted notes. Ideal as an aperitif, with Asian dishes and goat cheese.
Ellipse Red 2018 – Aging in a jar promotes micro-oxygenation of the wine without denaturing it. Elegant nose, intense color, this wine of great finesse combines aromas of red fruits and garrigue. Smooth and massive palate with a long finish. A bottle that goes off the beaten track… Sublime agreement with all types of game or with dishes in sauce.
